Zucchini Cakes

 

What you’ll need:

  • 1 large zucchini, grated (roughly 2 cups grated)
  • 1 large egg
  • 1 cup panko breadcrumbs
  • ½ cup grated parmesan cheese
  • salt and pepper to taste
  • 1 tbsp adobo spices

 

What to do:

Step 1: Cut off the ends of the zucchini, and grate using the bigger holes of a cheese grater.

Step 2: Squeeze excess liquid from freshly grated zucchini by placing them between paper towels and squeezing

Step 3: In a large bowl, combine all the ingredients. Mix thoroughly.

Step 4: Heat a large pan on medium, and spray with coconut oil spray.

Step 5: Shape zucchini mixture into flatten patties, about 2 inches in diameter, and drop onto the sizzling pan.

Step 6: Cook 2 minutes per side, or until the outside is golden brown.

Step 7: *Optional for crispier cakes. Place cakes on a baking pan and broil them for 1-2 minutes in the oven

 

Makes 8 servings. Macros for 1 cake = 8p/8c/4F = 100 calories
