Twice Baked Sweet Potatoes


What you’ll need:

  • 1 medium sweet potato
  • 2 pieces Turkey Bacon, precooked
  • ½ sweet onion, diced
  • 1 tsp olive oil
  • 2 garlic cloves, minced
  • 2 eggs
  • salt and pepper to taste


What to do:

Step 1: Preheat oven to 400 degrees

Step 2: Poke sweet potato with fork a few times and place directly on oven rack

Step 3: Bake 40 minutes until soft

Step 4: Remove sweet potatoes and let cool

Step 5: In a small skillet, heat olive oil and add garlic and onions

Step 6: While these are cooking, cut bacon into small pieces.

Step 7: Once potato is cool, cut lengthwise and scoop out the insides about ¼ inch away from the skin. Do not discard the skin!

Step 8: Add the sweet potato to the skillet with half the bacon pieces.

Step 9: Add salt and pepper.

Step 10: Place sweet potato skins on a foiled baking sheet.

Step 11: Scoop sweet potato mash mixture into potato skins.

Step 12: Create a large opening in the middle for the egg.

Step 13: Crack an egg in each opening and sprinkle with remaining bacon bits.

Step 14: Bake 15 minutes or until yoke is cooked through.
