Sweet Potato Turkey Egg Bake:

What you’ll need:

  • ½ tbsp. coconut oil
  • 320g sweet potato, peeled and cubed
  • 6 Jimmy Dean Pre Cooked Turkey Sausage Links (or 4 oz turkey sausage)
  • ½ small red onion, chopped or sliced (1/3 cup)
  • ½ red bell pepper, chopped or sliced (½ cup)
  • 50g spinach leaves
  • 7 whole eggs
  • Sea salt & pepper
  • Avocado, sliced (optional)


What to do:


Step 1: Preheat oven to 400 degrees.

Step 2: Grease a 9×9-inch round or square glass dish with coconut oil or organic cooking spray.

Step 3: In a medium sauce pan, heat coconut oil on medium-high heat. Once oil is hot, add sweet potato cubes. Dash with sea salt. Cover and let cook for about 10 minutes or until sweet potatoes are tender. Stir occasionally. Add water if needed for moisture.

Step 4: Brown sausage in separate sauce pan

Step 5: Add onions, peppers, and desired veggies to turkey sausage. Cook until onions are translucent.

Step 6: Add spinach leaves and cook for 1-2 minutes

Step 7: In a separate bowl, whisk together eggs, salt and pepper.

Step 8: In a 9×9 inch dish, layer the cooked potatoes, turkey sausage and veggies, and then pour eggs evenly over all.

Step 9: Back in over for 15-18 minutes until cooked evenly through.

Step 10: Let stand 5 minutes before cutting into 4 servings.
