Sweet Potato Tots

 


What You’ll Need:

 

  • 1 3/4 cup mashed sweet potatoes about 3 medium size sweet potatoes (420 g mashed sweet potatoes)
  • 1 egg yolk
  • 1 cup Gluten Free Old fashioned oats (80g)*
  • 1/4 cup fresh basil, chopped
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp sea salt

 

*I lightly pulsed my oats in a blender to create more of “breadcrumb” consistency. Careful not to over blend them into a flour consistency!

 

What to Do:

 

Step 1: Preheat oven to 375F.

Step 2: Pierce sweet potatoes with fork and place directly into microwave. Cook for about 6-10 minutes, checking occasionally. Sweet potatoes are done when you can easily poke through them with a fork*

Step 4: Remove sweet potatoes from the microwave and allow to cool before handling them.

Step 5: Slice the sweet potatoes in half lengthwise and use a spoon to scoop out the insides. You can throw away the skins

Step 6: Place the sweet potatoes in a large mixing bowl.

Step 7: Add egg yolk, basil, oats, pepper, garlic, and salt.

 

 

Step 8: Combine with a spoon until it forms a mash that you can easily handle with your hands to shape small tots. (not too wet and the dough should stay together easily)

 

 

Step 9: Line a baking tray with aluminum foil, spray lightly with coconut oil spray, and set aside

Step 10: Use your hands to shape the sweet potato tots and place them on the tray leaving half thumb space between each tots.

 

 

Step 11: Bake at 375F for 16-20 minutes or until the outside is crispy and slightly golden brown. The center will stay soft and moist.

 

Makes 24 tots

Macros for 1 tot = 1p/5c/.5 f = 29 calories

 

 

Notes:

 

*You can also bake your potatoes before hand if you like! I zapped mine to save time.
