Steak Roll Ups

 

What you’ll need:

  • 8-10 thin sliced steak cut into 1-2 inch by 3-5 inch slices (I used thin sliced breakfast steak)
  • ½ cup Worcestershire sauce
  • salt and pepper to taste
  • 1 zucchini, thinly sliced
  • 5 green onions, thinly sliced
  • 1 carrot thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic
  • 1 tbsp olive oil, divided
  • 2-3 tbsp balsamic vinegar

 

What to do:

Step 1: Season the steak with salt, pepper and Worcestershire sauce. Marinate for at least 1 hour or overnight.

Step 2: Add ½ tbsp. olive oil to sauce pan

Step 3: Add garlic and sauté 1-2 minutes

Step 4: Add sliced veggies and stir fry for 2-3 minutes

Step 5: Remove veggies from heat and allow to cool before handling

Step 6: Take a strip of steak with the short side facing you and layer veggies at one end. Roll the steak over the filling and secure with a tooth pick. Repeat for all pieces of steak.

Step 7: In the same sauce pan, no need to clean it!, heat ½ tbsp. olive oil.

Step 8: Add steak rolls, toothpick side down to the sauce pan.

Step 9: Divide balsamic vinegar among steak rolls (I just add a dab or so to each – but add as you desire!)

Step 9: Flip rolls to cook evenly on all sides, and cook for a few minutes until desired doneness.

Step 10: Don’t forget to remove the toothpick before serving!
