Skinny Fried Rice


What you’ll need:

  • 1 cup brown or white rice, dry
  • 2 egg whites
  • 1 large egg
  • 1/2 onion, diced
  • 1/2 cup frozen peas and carrots
  • 1 tbsp minced garlic
  • ½ tbsp. olive oil
  • 2 tbsp soy sauce, or more to taste

What to do:

Step 1: Precook rice per direction, or use a rice cooker.

Step 2: While rice is cooking, add olive oil to skillet and allow to heat up

Step 3: Sauté garlic and onion until onion is translucent

Step 4: Add peas and carrots

Step 5: Once rice is done cooking, add to skillet.

Step 3: Add egg and egg whites, and cook covered for 2-3 minutes.

Step 4: Remove lid and fluff with a fork

Step 5: Add soy sauce and serve


Makes 4 servings. Macros for 1 serving: 8p/41c/3f = 225 calories 2g fiber
