Quinoa Chicken Nuggets

 

What you’ll need:

 

  • 12 oz boneless skinless chicken breast
  • 1/3 cup All Purpose Flour
  • 2 eggs + 2 tbsp. water
  • 2 cups cooked quinoa
  • 1 tsp. salt
  • ¼ tsp. pepper

 

What to do:

 

Step 1: Preheat oven to 425 degrees

Step 2: Chop chicken in 2 inches pieces.

Step 3: In a small bowl, whisk together flour, salt and pepper.

Step 4: In a separate bowl, whisk together eggs and 2 tbsp. water

Step 5: Line a baking sheet with foil and spray with non stick cooking spray

Step 6: Dip each piece of chicken in flour mixtures, then egg mixtures, and finally roll in cooked quinoa and lay flat on baking sheet.

Step 7: Repeat for all pieces of chicken.

Step 8: Spray generously with coconut oil spray if desired. This helps the nuggets get crispy.

Step 9: Bake 20-25 minutes or until chicken is cooked through.

*Optional – broil for a few minutes until desired level of crispiness!

 

Makes 4 servings. Macros for 1 – 3 ounce serving = 33p/26c/5f with 2g fiber = 280 kcals
