Quinoa Bites

Quinoa Bites:


What you’ll need:

  • 1 cup cooked quinoa
  • ½ cup shredded cheese
  • 2 egg whites
  • 1 clove garlic
  • 1 tsp salt
  • chopped spinach


What to do:

Step 1: Preheat oven to 350°F and spray a mini muffin tin with cooking spray.

Step 2: Prepare quinoa according to package instructions.

Step 3: In a medium bowl, mix the warm quinoa with the cheese to melt the cheese. Add the egg whites, garlic, salt, and spinach leaves. Stir to combine.

Step 4: Spoon mixture into mini muffin tins, filling to the top

Step 5: Bake at for 20 minutes.

Step 6: Remove from oven and let cool for 10 minutes. Run a small knife around the edges to loosen and pop out of the muffin tin.


Make 12 mini muffins. Macros for 1 muffin = 2.5p/3c/1.5f = 35 kcals
