Pumpkin Mug Cake

What you’ll need: 

  • 1 serving Rule 1 Pumpkin Spice Protein
  • ½ tsp baking powder
  • 1 tbsp. coconut flour
  • 1 tbsp. cocoa powder
  • ¼ cup egg whites
  • 1 tbsp. canned pumpkin
  • 2 tbsp. unsweetened almond milk


What to do:

Step 1: Spray a microwave safe coffee mug with non stick spray

Step 2: In a separate mixing bowl, whisk together all ingredients.

Step 3: Pour batter into greased coffee mug

Step 5: Microwave on high for 40-50 seconds until desired doneness (I like mine

still gooey!)

Step 6: Remove from microwave and enjoy!

Optional – mix together some Pumpkin Spice Protein with unsweetened almond milk and drizzle over mug cake




Makes 1 serving (1 mug cake) = 36p/14c (with 6.5g fiber!)/3f = 230 kcals
