Pumpkin Chili

 

What you’ll need:

  • ½ Tbsp coconut oil
  • 2 cups chopped yellow onion (about 1 large onion)
  • 1 medium green bell pepper, diced
  • 1 ½ pounds 93/7 lean ground turkey
  • 1 28-oz can diced tomatoes
  • ½ 6-oz. can tomato paste
  • 1 14-oz. can pumpkin puree
  • ½ – 1 cup chicken broth or water
  • 2 ½ tsp. dried oregano
  • 2 Tbsp. chili powder
  • 1 tsp. ground cinnamon
  • 1½ tsp. ground cumin
  • 1 tsp. sea salt
  • ¼ tsp black pepper

 

What to do:

Step 1: Heat a skillet over medium heat.

Step 2: Add oil, onions and peppers and sauté until onions start to become opaque.

Step 3: Add ground turkey and cook until meat is cooked through

Step 5: Place meat mixture in crockpot.

Step 6: Add remaining ingredients

Step 7: Cook on LOW for 6-7 hours.

Step 8: Serve
