Protein Pumpkin Bread

What you’ll need:

  • 1 cup (240g) pumpkin purée
  • 1 cup (80g) oats ground into flour – I use old fashioned oats
  • 2 scoops (62g) Rule 1 Salted Caramel Protein
  • 2 eggs
  • 60g egg whites
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda

 

What to do:

Step 1: Preheat over to 350°F

Step 2: Spray an 8×4 pan with nonstick spray

Step 3: Mix all ingredients together

Step 4: Add to pan
Step 5: Bake 20-24 minutes
makes 8 slices – 11p/10P (with 2g fiber)/2F per slice = 100 calories
