Protein Muddy Buddies

 

What You Need:

• 1 serving (30g) Rule 1 whey protein powder (any flavor – I used Chocolate)
• 3 cups (81g) rice cereal (I used Chex)
• 1/8 cup (30g) sugar free syrup – I used Maple Groves)
• 1 tsp vanilla extract
• 3 tbsp (42g) cacao butter*, chopped
• 14g Sugar Free Pudding mix flavor of choice (I used Butterscotch)

 

What To Do:

Step 1: Melt chopped cacao butter and syrup in the microwave for 30 seconds. Remove and mix together until cacao is melted and combined.
Step 2: Add vanilla extract and sugar free pudding mix to melted cacao butter and syrup and mix until combined.
Step 3: In a separate bowl, measure out 3 cups of rice cereal.
Step 4: Pour chocolate mixture over cereal and gently toss with spatula to coat cereal.
Step 5: Add 1 serving protein to a gallon size Ziploc bag.
Step 6: Dump coated cereal into Ziploc and seal tightly. Gently shake until all the cereal is coated.
Step 7: Empty Ziploc bag onto a waxed paper covered baking sheet and allow to cool completely.
Step 8: Once cooled, serve immediately, or store in air tight container for up to 4-5 days.

Makes 6 ½-cup servings: approx. 28g = 5p/14c/7f = 140 calories

*I came across cacao butter when looking for a healthier alternative to melting chocolate in my holiday baking. Cacao butter is dairy free and vegan since it is raw and much less processed than cocoa powder or chocolate bars. It is said to have the highest amount of antioxidants, vitamins, minerals and monounsaturated fats.
I bought this bag and upon opening it, Oh. My. God. The smell is amazing! It’s a rich buttery, and powerful smell of chocolate! Like what I would imagine a chocolate factory tastes like!
Cacao butter is meant for baking and in recipes as it is quite powerful and bitter when eaten alone. But it makes for a delightful treat in this recipe!

Note: Try experimenting with different pudding mixes and protein powder flavor combinations! Let me know if you find some awesome combos
