Protein Flaxseed Cookies

What you’ll need:

  • 1/4 cup ground flax seed
  • 2 tablespoons chia seeds
  • 2 tablespoons cinnamon
  • 3 large eggs
  • 2 teaspoons vanilla
  • 1/4 cup of unsweetened vanilla almond milk
  • 1/4 cup Stevia in the raw
  • 2 servings whey protein powder ( I used Rule 1 Whey Vanilla Ice Cream)
  • 1 teaspoon baking soda,
  • 1 teaspoon baking powder
  • 1 can (15 oz) pumpkin
  • 4 tbsp Enjoy Life Mega Chunks Baking Chips

 

What to do:

Step 1: Preheat oven to 350 degrees.

Step 2: Add all the ingredients to a mixing bowl and combine well.

Step 3: Grease a baking sheet and drop servings of roughly 1 heaping tbsp of dough onto pan. Spread it out into a cookie form.

Step 4: Bake 10-12 minutes

Step 5: Let cookies cool on pan slightly before handling and moving to cooling rack.

Step 6: Store the cookies in the refrigerator. They will keep up to 5 days – if YOU canJ
