Protein Cinnamon Rolls

 

What you’ll need:

 

For the Dough

  • 160g oat flour
  • 5 servings Rule 1 100% Whey Blend
  • 1 ¼ tsp baking powder
  • ¼ tsp salt
  • 4 tsp honey
  • 2 tbsp unsweetened applesauce
  • 8 tsp liquid egg whites
  • ½ tsp vanilla extract
  • ¼ tsp butter extract

 

For the Filling:

  • ¼ cup Sugar Free Syrup (I used Walden Farms here)
  • ¼ tsp cinnamon
  • 2 drops butter extract

 

For the Glaze:

  • 1 oz Fat Free Cream cheese
  • ½ serving Rule 1 100% Whey Blend Protein
  • enough unsweetened almond milk to make a paste
  • dash of vanilla

 

What to do:

Step 1: Preheat oven to 350 degrees

Step 2: For the dough: combine oat flour, protein powder, baking powder and salt.

Step 3: Mix in wet ingredients: honey, applesauce, egg whites, vanilla and butter extract. Mixture will be crumbly. Knead together until you form a stiff dough.

Step 4: Roll dough onto floured surface into a long rectangle.

Step 5: Mix together ingredients for filling.

Step 6: Spread filling onto dough.

Step 7: Starting from the long end, roll dough into long tube. Cut into 12 slices.

Step 8: Place rolls on greased baking sheet and spread evenly.

Step 9: Bake 10-12 minutes.

Step 10: Mix together icing ingredients

Step 11: Remove rolls from oven and drizzle with icing.

 

Makes 12 servings. Macros for 1 serving (with icing!)= 8p/12c/2f
