Paleo Bread

 

What You Need:

 

  • 3 eggs
  • 2 Tbsp. olive oil
  • 2 Tbsp apple cider vinegar
  • ¼ cup water
  • ¾ cup (84g) blanched almond flour
  • ¼ cup (38g) arrowroot starch
  • ¾ cup (78g) golden flaxseed meal
  • ¾ cup (90g) Tapioca Flour
  • 1 tsp. baking soda
  • ½ tsp salt

What to Do:

 

Step 1: Preheat oven to 350F.  Spray a 8×4 inch loaf pan with nonstick spray

Step 2: Whisk together the eggs, oil, vinegar and water.

Step 3: In a separate bowl, mix together the flours, baking soda and salt

Step 4: Add to wet ingredients and mix until combined. Let the batter sit for a minute to thicken.

Step 5: Pour batter into prepared loaf pan.  Spread it out so that the surface is even. 

Step 6: Bake for 25-30 minutes or until tooth pick inserted comes out clean. Allow to cool before cutting into 12 slices!


Macros for 1 slice = 4.5p/12c/9f = 140calories with 3g of fiber per slice!
