Oatmeal Banana Muffins

 

What you’ll need:

  • 3/4 cup mashed overripe banana (1 1/2 large bananas)
  • 1/2 cup unsweetened almond milk
  • 1/4 cup applesauce, unsweetened
  • 2 tbsp coconut oil, melted
  • 1 tsp pure vanilla extract
  • 1 1/4 cups rolled oats
  • 1/2 cup Protein Powder (I used Salted Caramel Rule 1)
  • 1/2 tsp baking powder, aluminum free
  • 1/2 tsp baking soda

 

What to do:

Step 1: Preheat oven to 375°F

Step 2: Mix together mashed banana, almond milk, applesauce, coconut oil, and vanilla extract

Step 3: Add in oats, protein powder, baking powder, and baking soda; mixing well.

Step 4: Spray a muffin tin with cooking spray and set aside.

Step 5: Fill each muffin tin about 2/3 full.

Step 6: Bake for 15 minutes or until browned.

 

Makes 12 servings. Macros for 1 muffin: 5p/9c (with 1g fiber)/3f = 85 calories
