Crockpot Creamy Chicken
What You Need:
**could use full fat and ½ as much arrowroot starch. I chose LITE to save on macros
What to Do:
Step 1: Heat a large skillet to medium heat and spray with non stick spray.
Step 2: Mix together all spices and rub on both sides of chicken breasts.
Step 3: Place chicken on skillet and sear both sides for about 2-3 minutes.
Step 4: Transfer chicken to crockpot, add broth and lime juice.
Step 5: Cook on low for 4-6 hours until chicken is tender.
Step 6: Mix arrowroot powder with water and add to crockpot. Add in coconut milk and cook for another 20-30 minutes.
Step 7: Serve on top of white rice!
