Cloud Bread

What You Need:

  • 4 large eggs, separated
  • 1/2 teaspoon cream of tartar
  • 2 ounces low fat cream cheese – softened
  • 1 teaspoon Italian herb seasoning
  • 1/2 teaspoon sea salt
  • 1/4 – 1/2 teaspoon garlic powder

What To Do:

Step 1: Preheat the oven to 300 degrees F.

Step 2: Line two baking sheets with wax paper

Step 3: Separate the egg whites from the yolks and place the whites into the mixing bowl of a stand mixer.

Step 4: Add cream of tarter to egg whites and whip on high using the whisk attachment until stiff peaks form.

Step 5: Remove egg white mixture and place in a separate bowl.

Step 6: Add cream cheese and egg yolks to the empty stand mixing bowl and beat until smooth and the add in seasonings to egg yolk mixture

Step 7: Carefully fold the egg white foam into the egg yolk mixture without deflating the foam too much.

Step 8: Spoon ¼ cup portions onto the baking sheets and gently spread into 3-4 inch circles (or

however large you want your bread to be!) roughly ½ –

¾ inches high.

Step 9: Bake for 15-18 minutes and allow to cool on the baking sheets before removing!

I was able to get 12 bread rounds from this recipe.
