Chocolate Muffins

 

What you’ll need:

  • 1 1/3 cup Rule 1 Chocolate Protein
  • ½ cup baking Stevia
  • ¼ cup coconut flour
  • ¼ cup unsweetened cocoa powder
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup unsweetened almond milk, divided
  • 7 squares of dark chocolate, chopped and divided
  • 4 egg whites
  • 4 teaspoons vanilla extract

 

What to do:

Step 1: Preheat oven to 350°F

Step 2: Grease or coat a muffin tin with cooking spray and set aside.

Step 3: Mix together protein powder, stevia, coconut flour, unsweetened cocoa powder, baking powder, and salt until well combined.

Step 4: Mix together 3/4 cup of almond milk with 4 squares of chopped chocolate. Microwave for 1 minute, mix well, and continue cooking in 15 second intervals until combined and smooth.

Step 5: Add remaining ¼ cup almond milk, egg whites, and vanilla extract to melted chocolate and mix well.

Step 6: Add wet ingredient to dry ingredients and blend well.

Step 7: Fill muffin cups ½ way with batter.

Step 8: Sprinkle remaining chocolate over batter and top with remaining batter.

Step 9: Bake 18-20 minutes.

 

Makes 12 servings. Macros for 1 muffin: 11p/10c/1.5f = 100 kcals
