Chicken Salad

 

What you’ll need:

  • 1/3 cup plain Greek yogurt (you can add more or less depending on how moist you prefer your chicken salad to be)
  • 1 medium (4 oz avocado)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon fresh ground black pepper
  • 2 cups cooked chicken, diced
  • 2 tablespoon diced red onion
  • 1/3 cup diced green celery
  • 1/2 cup diced apple
  • 1/4 cup sliced raw almonds

 

What to do:

Step 1: Mix together Greek yogurt, avocado, garlic powder, salt and pepper.

Step 2: Add remaining ingredients until well-combined.

Step 3: Serve over romaine lettuce boats or on the bread of your choice.

 

Makes about 4 servings (more or less depending servings as desired). Macros for ¼ recipe = 20p/8c (3g fiber)/10f = 200 calories
