Chicken Pot Pie Soup


What you’ll need:

  • 16 oz cooked boneless skinless chicken breast – shredded or cubed
  • 8 oz baked Russet Potatoes, cubed
  • 2 oz chopped yellow onion
  • 12 oz frozen veggies (mix of carrots, green beans, corn, and peas)
  • 2/3 cup All Purpose Flour
  • 1 cup water
  • 6 cups 1% milk
  • salt and pepper to taste


What to do:

Step 1: Add milk to large pot and slowly bring to a boil

Step 2: Add in onion and veggies and simmer on low for 10 minutes

Step 3: Add in potatoes and simmer for another 10 minutes

Step 4: In a separate mixing bowl, whisk together the flour and water

Step 5: Slowly add the chicken and flour mixture to the pot and allow to cook about 5 minutes until the soup has thickened.


Makes 6 servings. Macros for 1 cup = 34p/38c/3f with 3g fiber – 315 kcals
