Cauliflower Pizza Bites

What you’ll need:

  • 1 bag rice cauliflower*16 oz bag
  • 1 egg
  • 1/4 cup shaved Parmesan cheese
  • 1/2 cup shredded Italian cheese blend (or mozzarella)
  • 1/3 cup pizza sauce
  • 16 mini pepperonis
  • 1/2 tbsp Italian seasoning

 

*can also make your own riced cauliflower

Cut florets from cauliflower head and place them into a food processor. Pulse until the crumbs resemble a rice like consistency.

 

What to do:

Step 1: Preheat over to 400°F

Step 2: Place riced cauliflower in a microwave safe dish and loosely cover with paper towel.

Step 3: Microwave on high for 5 minutes

Step 4: Allow cauliflower to cool before moving onto step 5

 

 

 

 

 

 

Step 5: Place cauliflower in a dish towel or cheese cloth and squeeze as much water as you can.

 

 

 

 

 

 

 

Step 6: Transfer cauliflower to a new towel and squeeze again to remove

as much liquid as possible. *THIS PART IS SUPER IMPORTANT!

 

 

 

Step 7: Place dried cauliflower into a mixing bowl and add in egg, parmesan cheese and seasonings.

 

 

Step 8: Spray mini muffin tin with nonstick spray.

 

Step 9: Add about a tablespoon of the cauliflower mixture into each tin.

 

 

 

 

 

 

 

 

Step 10: Press down with your thumb to create a bowl shape in each muffin tin.

 

 

 

 

 

 

 

 

Step 11: Bake 20 minutes or until golden.

 

 

 

 

 

Step 12: Remove from oven and add toppings of choice – pizza sauce, cheese, pepperoni, etc.

 

 

 

 

 

 

 

 

Step 13: Return to oven and bake for 10 more minutes.

 

Makes 16 cauliflower pizzas – macros for one pizza bite  – 3p/2c/2f = 35 kcals
