Caprese Chicken

Caprese Chicken:

What you’ll need:

  • Four 5 oz chicken breasts (Weighed Raw)
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper;
  • 2 oz shredded mozzarella cheese
  • One 10-oz container cherry tomatoes
  • 10 fresh Basil leaves, chopped

 

What to do:

Step 1: Preheat Oven to 400 degrees

Step 2: Heat large oven-save skillet to medium heat

Step 3: Season chicken breast with salt, pepper, and garlic powder on each side

Step 4: Spray pan with coconut oil spray and add chicken.

Step 5: Brown chicken for about 3 minutes each side

Step 6: Add cherry tomatoes to pan to place in oven to bake for 20-25 minutes.

Step 7: Take out of oven and smash tomatoes with a fork if they haven’t burst open yet.

Step 8: Turn oven to High broil

Step 9: Add ½ oz cheese on each chicken breast and place back into oven to broil 3-5 minutes.

Step 10: Remove from oven and top with fresh basil

 

Makes 4 servings (1 chicken breast). Macros for 1 serving = 30p/6c/5f = 190 calories
