Caprese Chicken Roll Ups


What You Need:

  • 120g (1/2 cup) ricotta cheese
  • handful spinach, roughly chopped
  • 1 tbsp chopped fresh basil
  • 1 lb chicken breast
  • 1/3 cup egg whites
  • 12 Saltine Crackers
  • 2 oz thinly sliced Mozzarella cheese
  • ½ cup tomato/marinara sauce



What To Do:

Step 1: Preheat oven to 425F and lightly grease shallow casserole dish with coconut oil spray.

Step 2: Add chopped spinach to skillet and sauté with coconut oil spray until tender.

Step 3: Remove spinach from heat and add to ricotta cheese.

Step 4: Add chopped basil to ricotta mix and set aside.

Step 5: Using a meat mallet or rolling pin, flatten chicken breast and cut into 4 – 4 oz portions.


Step 6: Spoon the ricotta mixture onto each chicken breast and roll them up.

Step 7: In a separate shallow bowl, add egg whites.

Step 8: In another bowl, add crushed Saltines.

Step 9: Take each chicken roll and dunk in egg whites before rolling in crushed crackers and placing in baking dish.

Step 10: Bake for 25 minutes until chicken is cooked through.

Step 11: Remove from oven and place 2 tbsp marinara sauce on top of each chicken roll up.

Step 12: Top each roll with ½ oz thinly sliced Mozzarella cheese.

Step 13: Return to oven for 5 minutes.

Bonus* I like to switch my oven to BROIL and broil on high for 2-3 minutes until the cheese is browned on top!

Remove from oven and serve.
