Blueberry Protein Muffins:

What you’ll need:

  • 1 cup Kodiak Power Cakes Pancake Mix
  • 5 servings (45g) vanilla ice cream Rule 1 100% Whey Blend
  • 1/2 cup baking stevia (or sweetener of choice)
  • 3/4 cup water
  • 1 container Siggi’s Plain Greek Yogurt (can substitute for other Greek yogurt brand)
  • 1 whole egg
  • 1 tbsp. coconut oil, melted
  • 1/2 tsp. vanilla extract
  • ½ cup blueberries, fresh or frozen

 

What to do:

Step 1: Preheat oven to 350 degrees

Step 2: Mix together Kodiak mix, protein, and stevia.

Step 3: Add in water, yogurt, egg, coconut oil and vanilla.

Step 4: Beat well until there are no clumps.

Step 5: Fold in blueberries

Step 6: Spray muffin tin well with non-stick spray.

Step 7: Divide batter evenly between cups.

Step 8: Bake for 25-30 minutes or until toothpick inserted comes out clean.

 

Makes 12 muffins. Macros for 1 muffin = 7p/11c/2f
