Baked Pumpkin Oatmeal

 

What You Need:

 

 3 cups (240g) old fashioned oatmeal

1 15 oz. can pumpkin puree

1 tsp. pumpkin spice

1 tsp. cinnamon

1/4 cup egg whites

1/2 cup Stevia Baking Blend

2 tsp vanilla extract

1 serving Rule 1 Protein (I used Pumpkin Spice!)

1 cup almond milk

 

What To Do:

 

Step 1: Preheat oven to 350 degrees F.

Step 2: In a medium mixing bowl, add Stevia to almond milk so allow stevia to dissolve.

Step 3: Add the pumpkin puree, egg whites, vanilla, pumpkin spice, cinnamon, protein powder and almond milk and mix until smooth and completely combined.

Step 4: Add the oatmeal to the mixture and mix again until completely combined.

Step 5: Pour into a greased or sprayed 8×8 inch baking pan. Bake for 35 to 40 minutes.

Step 6: Cut in 12 squares and enjoy 🙂

 

Macros for 1/12 recipe = 6p/23c (3.5g Fiber)/1.5f = 130 calories
