Almond Butter Chocolate Chip Cookies

 

What you’ll need:

  • ¾ cup gluten-free rolled oats
  • ¼ cup gluten-free oat flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 flax eggs (whisk together 2 tablespoons ground flax + 6 tablespoons water, let set for 10 mins)
  • 2 tablespoons melted coconut oil
  • ¼ cup + 2 tablespoons natural, unsalted creamy almond butter
  • ¼ cup coconut sugar
  • ½ teaspoon pure vanilla extract
  • ½ cup Enjoy Life chocolate chips

 

 

What to do:

Step 1: Preheat oven to 350 degrees

Step 2: In a large bowl, whisk together oats, oat flour, cinnamon, baking powder, baking soda and salt.

Step 3: In a separate bowl, whisk together flax eggs, coconut oil, almond butter, coconut sugar and vanilla

Step 4: Add the wet ingredients to the dry ingredients and fold together until combined.

Step 5: Fold in chocolate chips

Step 6: Line baking sheet with foil and spray with nonstick spray.

Step 7: Drop about 2 tbsp. of dough onto baking sheet, spaced evenly.

Step 7: Use a fork to flatten cookies to desired thickness. They will not spread during baking.

Step 8: Bake about 10-14 minutes.

 

Makes 15 cookies. Macros for 1 cookie = 2.5p/8c/6f = 96 kcals with 2g fiber
